Whole Roasted Foie Gras for Thanksgiving
After deveining, reassembling, and chilling the foie gras, we will generously cover it with salt and pepper, then sear it in a very hot roasting pan for one or two minutes. We will then add about 3/4 cup of thinly sliced shallots to the pan, and place it in the oven, preheated to 400 degrees. It should cook about 8 minutes total; 4 minutes on each side. The way to test for doneness is to stick a skewer into the middle of the foie. If the juice is slightly pink, it's done.
